Thanks to the addition of kefir, the pancakes are light and tender, while the pumpkin puree keeps them moist and gives them a lovely golden color. They are perfect for breakfast, brunch or a sweet afternoon snack.
👩🍳 INSTRUCTIONS
-
Place eggs, salt, pumpkin puree and kefir in a mixing bowl.
-
Add flour, oil, baking soda, baking powder and vanilla sugar.
-
Mix all ingredients until a smooth batter forms.
-
Let the batter rest for 15 minutes.
-
Heat a frying pan over medium heat.
-
Spoon portions of batter onto the pan to form pancakes.
-
Cook on both sides until golden brown. Because the pancakes are thick, cook them a little longer over medium heat so they cook through.
