Thanks to the addition of kefir, the pancakes are light and tender, while the pumpkin puree keeps them moist and gives them a lovely golden color. They are perfect for breakfast, brunch or a sweet afternoon snack.

👩‍🍳 INSTRUCTIONS

  1. Place eggs, salt, pumpkin puree and kefir in a mixing bowl.

  2. Add flour, oil, baking soda, baking powder and vanilla sugar.

  3. Mix all ingredients until a smooth batter forms.

  4. Let the batter rest for 15 minutes.

  5. Heat a frying pan over medium heat.

  6. Spoon portions of batter onto the pan to form pancakes.

  7. Cook on both sides until golden brown. Because the pancakes are thick, cook them a little longer over medium heat so they cook through.
